Xylitol is a sugar alcohol that has a crystalline, structure with a sweetness in excess to that of sugar. It naturally occurs in many fruits and vegetables. It is a helpful addition to the diabetic’s arsenal as it does not spike blood glucose. However, as with any man-made product (most xylitol sold is from a by-product of the corn cob), living in delight would encourage you to use this sparingly. It is better to make a life-style change that leaves you less dependent on sweetners.
That said we will post an amazing banana bread recipe using it just to give you a feel for its’ potential.
Use 2/3rds of the quantity that you would have used for sugar and experiment from there.
