So what is the difference between cacao and cocoa?
Raw cacao powder is manufactured by cold-pressing cocoa beans, this leaves the enzymes in the cocoa and removes the fat (cacao butter). Cocoa powder is raw cacao that’s been roasted at high temperatures to improve the flavours.
