Cheesy Bean Crunch

Ingredients

100g pecan dust or 70g polenta fine
125g cheese
1 onion
3 garlic cloves
1/4 to 1/2  tsp chilli flakes
2 tins beans (total drained weight 480g- a 4 bean mix is best, though kidney, butter or cannelloni suit)
1 can chopped tomatoes
5 ml stock powder
Salt and pepper to taste (start with half tspn salt)

Extra Virgin Olive Oil

Optional 4 pieces of Bacon

Optional additional veggies

Follow for a Thermomix version

Instructions

  1. Grate the cheese, mix with pecan or polenta and set aside
  2. Saute the onion and garlic in olive oil
  3. (optional) chop Bacon and fry with onion mix for 2 mins
  4. Add beans, tomato, stock and salt
  5. Simmer for 20 mins (Optional 10 mins in add whatever veggies you fancy, my favorite is a pepper and some cauliflower)
  6. Top with cheese mix and grill to brown
Thermomix version

1. Grate cheese..6s speed 6, add pecan dust/polenta …3s speed 6, set aside
2. Onion and garlic… 3 sec speed 7 scrape down, repeat if required
3. Add olive oil… Saute varoma, 3 min, speed 1
4.1 Optional- Bacon…cut into pieces with scissors…Saute varoma 2 min, reverse speed 1
4. 2 Add stock beans, tomatoes
5. 25 plus mins 100 degrees, reverse, speed 1

OR set for 15 minutes then any additional veggies you fancy such as cauliflower (small chunks), sliced pepper

Then run for additional 10 minutes
6. Top with cheese mix and grill
